- To Toast & Grind Whole Spices:
- 3 tbsp coriander seeds
- 1 tbsp cumin seeds
- 1 tsp fennel seeds
- ½ tsp fenugreek seeds
- ½ tsp mustard seeds
- 1 tsp black peppercorns
- 3 green cardamom pods seeds only
- 1- inch piece cinnamon stick
- Optional pinch of nigella seeds or 2 whole cloves
- Post-Grind Additions Powders:
- 2 tbsp ground turmeric
- ½ tsp ground ginger
- ½ tsp garlic powder
- 1 tsp smoked paprika
- ¼ –½ tsp cayenne pepper or Kashmiri chili powder to taste
- Optional Accents:
- ¼ tsp amchur dried mango powder
- Pinch of nutmeg or mace
Instructions

- Add all the whole spices to a dry skillet over medium heat. Toast for 2–3 minutes, stirring often, until fragrant.
- Remove from heat and let cool slightly.
- Grind toasted spices into a fine powder using a spice grinder or mortar and pestle.
- Add the remaining powdered spices to the ground mixture and stir well to combine.
- Store in an airtight jar away from light and heat. Use within 2–3 months for best flavor.

Use 1–2 teaspoons per dish as a starting point and adjust to taste.
Kashmiri chili adds vibrant color with mild heat; cayenne adds more punch.
