Ingredients
  

  • 3 cups corn fresh, canned, or thawed frozen
  • 1/4 cup mayonnaise
  • 2 tbsp sour cream
  • Juice and zest of 1 lime
  • 1/4 cup chopped cilantro
  • 1/4 cup crumbled cotija or feta cheese
  • 1/4 tsp chili powder
  • Salt and pepper to taste

Instructions
 

  • In a large bowl, mix together mayo, sour cream, lime juice and zest.
  • Stir in corn, cilantro, and cheese.
  • Season with chili powder, salt, and pepper.
  • Chill for 20 minutes before serving.

Notes

Frozen corn can be used — just thaw and pat dry before mixing.
Serve cold or room temp. Great side for BBQ or tacos!
